Chinese Baked Ginger Chicken


– 6 Chicken Legs
– 2 tablespoons Crushed Ginger
– 1/2 cup Fresh Lemon Juice
– 2 teaspoon Red Chili Powder
– 1/4 teaspoon Coarse Salt
– 1/4 teaspoon Fresh Ground Ground Pepper
– 1/4 teaspoon Thyme
– Extra Virgin Olive Oil


– Combine crushed ginger, fresh lemon juice, red chili powder, salt pepper, thyme, and olive oil in jar with tight fitting lid. Shake well.
– Let sauce mixture stand at room temperature 1 hour. Shake occasionally to blend flavors.
– Preheat oven to 400 F.
– Arrange chicken legs in shallow baking dish in a single layer.
– Pour sauce over chicken.
– Bake 1 hour.
– Turn legs. Reduce heat to 350. Bake additional 25 minutes.
– Serve immediately.
